[makes 1 Waffle Sandwich]

INSTRUCTIONS:

Waffles: Preheat your waffle iron and spray with cooking spray so that the batter doesn’t stick. Grab a large bowl and add the Flour, Baking Powder, Salt, Sugar, Parmesean Cheese and Chives. Mix together with a fork until well combined. In a separate bowl, beat the eggs and milk together. Add the liquid ingredients to the dry and whisk together until combined (don’t overmix if you want the waffles to be fluffy). Add the room temperature melted Butter to the batter and stir in until combined. When your waffle iron indicates that it is ready, pour your mixture to cover and cook as directed by your iron or until waffle is a golden brown color. Remove from iron and set aside for building the sandwich.

Sandwich: Heat a small frying pan over medium heat with some cooking spray or Butter (if you want crispy edges to your fried egg, use the Butter). When the pan is hot, crack your egg into it, and cook until the egg whites have all turned white, but the yolk is still bright yellow and runny. We like ours over medium. Remove from heat and set aside for plating. While the egg is frying, heat a separate medium-sized frying pan over medium-high heat and give the pan a spray. Add 2 Regular Ozo Ground Patties, spaced evenly apart. Cook 2-2 ½ minutes on each side, turning a few times until each patty is golden brown. To plate, take your waffle and cut it into thirds (we used a 4 waffle iron, so we pulled 3 apart for the sandwich). Use one of your savory waffles as the base, topping it with some Butter and Arugula or Microgreens. Layer with another waffle, and add 2 Ozo Breakfast Patties and your fried Egg on top. Add the final Waffle on top of the stack and drizzle with maple syrup. Feel free to slice your yolk on your fried egg and let it run!
